Tomato Sauce with Pimiento (Salsa para Bollos Pelones)
Plain (unseasoned) tomato sauce 16 oz.
Red bell pepper 1/2 of one
Pimiento peppers 1 cup chopped (the red peppers that olives are stuffed with) or 3 whole pimientos, washed, stemmed, and seeded (or substitute with 1 red bell pepper)
Red bell pepper 1, washed, stemmed, and seeded
Red wine vinegar 2 tbsp
1. In a blender, blend all ingredients.
2. Cook sauce for 10 minutes on medium heat, and serve warm.
