Meat or Tofu Stuffing with Fruit (Picadillo de Frutas)

This is a quick entry for La Cocina de Leslie‘s Food of the Month Club. The theme this month is apples, so for your second fruit, I’m giving you the choice between two other fruits that are in season this time of year.

Meat or Tofu Stuffing with Fruit (Picadillo de Frutas)

Textured tofu or ground meat, cooked 1/2 lb.

Apple 1/2 of one, washed and diced

Pear 1/2 of one, washed and diced; OR jicama 1/2 of one, washed, peeled, and diced

Lime juice 2 tbsp

Agave nectar 1 tsp

1. Pour the lime juice and mix in the agave nectar until it dissolves into the juice.

2. Mix all ingredients into the lime-agave juice and serve warm. If you used ground meat and it came out greasy squeeze out as much grease as possible with paper towels before adding the meat to the stuffing. The acidic nature of the lime juice turned my ground beef (pictured below) pink, but I assure you that the meat was brown and thoroughly cooked.
